Ingredients
- 1 ripe banana, mashed
- 1 cup flour (use gluten-free flour if needed)
- 1 teaspoon baking powder
- 1/4 teaspoon cinnamon (optional)
- 1/2 cup milk (dairy or plant-based)
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon honey or maple syrup (optional)
- Pinch of salt
- Cooking oil or butter for frying
Instructions
Step 1: Prepare the Ingredients
Mash the ripe banana in a large mixing bowl until smooth. Set aside.
Step 2: Combine Wet and Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, cinnamon, and a pinch of salt. In another bowl, combine the milk, egg, vanilla extract, and optional honey or maple syrup. Stir the wet ingredients into the mashed banana until well mixed.
Step 3: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles start to form on the surface. Flip and cook for another 1-2 minutes until golden brown on both sides.
Step 4: Serve and Enjoy
Serve your banana pancakes warm with your favorite toppings, such as fresh berries, banana slices, maple syrup, or yogurt. Enjoy a delicious and nutritious breakfast!
Notes
- Make it Vegan: Use plant-based milk (like almond or oat milk) and a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water) instead of an egg.
- Fluffier Pancakes: Adjust the heat while cooking to ensure a golden, fluffy texture.
- Customizable: Add toppings like nuts, coconut flakes, or chocolate chips for added flavor.
